al dente – Cooked enough to be firm but not soft

double boiler – Can be bought at a store or can be used with a pot and a large glass bowl.  The pot or bottom pan is filled about halfway with water then brought to a boil.  The bowl or top pan is used to melt chocolate as a form of direct heat using steam generated by the bottom pan without the risk of burning

toothpick test – Usually used in baking in order to determine that the baked good has set, you insert a toothpick in the middle and if it comes out clean the it is done; if it comes out a bit wet then it needs to bake for a little longer
